When I think of fall, I think of a few scents in particular. I think of vanilla and cinnamon. Not only do these scents remind me of fall but they also make me think of baking cookies which is also something that we do in the fall. Every fall, my kids and I love to bake cookies and other goodies for teachers and friends. Baking cookies is such a fun thing to do together as a family and it is the fun of executing a perfect recipe that the kids really love. We hope that you love this Rolo Stuffed Snickerdoodles Cookie Recipe.
Rolo Stuffed Snickerdoodles Cookie Recipe
Makes 2 dozen – depends on size
Ingredients
- 2 3/4 cups all-purpose flour
- 1 stick salted butter, softened
- 1 teaspoon pure vanilla extract
- 2 large eggs, room temperature
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1 1/2 cups sugar
- 1/2 cup of shortening
- cinnamon for garnish
- extra sugar for garnish
- 2 dozen Rolo candies
Directions
- Preheat oven to 350 degrees and line a baking pan with parchment paper.
- Using an electric mixer, beat together the butter and sugar.
- Add in the vanilla extract and eggs in one at a time.
- Slowly add in the flour to the wet ingredients.
- Add in the cream of tartar.
- Using a plastic spatula, fold in the baking soda.
- Refrigerate cookie dough for 5 minutes.
- Roll a small ball of cookie dough, place one Rolo in the center, re-roll and press the top of the cookie into the cinnamon sugar mixture. Place on cookie sheet.
- Bake for around 9-10 minutes until golden brown. Sprinkle cinnamon and sugar on top.
